It's the finest speck, with a sweet and less smoky taste, produced with the best meats coming exclusively from the Province of Trento. Once trimmed with a knife in the typical shield shape, it is smoked with beech and juniper and aged for a long time in Smarano, for periods that can even take more than a year. It should be served sliced in a cutting board, with pickles and semi-hard cheeses. It matches well with structured red wines and aromatic whites.
Also available in "central cut", the most valuable part of the leg.
